Delicious Hot Cross Bun recipe that the whole family will love!

Ingredients

500g white bread flour plus extra for dusting

7g salt

7g instant yeast

80g light brown sugar

40g salted butter, softened

100ml cool water

140ml warm full-fat milk

2 medium eggs, beaten

150g raisins

1 apple finely chopped

Finely grated zest of 2 oranges

100g chopped mixed peel and candied fruit

5ml ground cinnamon

5ml ground mixed spice

For the cross

80g plain flour

80ml water

For the glaze

30ml golden syrup

Instructions

Add the flour, sugar, salt and yeast to the bowl of your stand mixer. Remember to add the salt and sugar to opposite sides of the bowl.

Add the milk, butter, eggs and half the water to the bowl and turn the stand mixer on low. Continue adding the water slowly until all flour has come away from the side.

Continue kneading the dough for 5 to 10 minutes.

Once the dough is smooth transfer it to a lightly greased bowl and cover with a clean tea towel to rise for 1 hour or until doubled in size.

With the dough still in the bowl add the spices, apple, zest and mixed peel /candied fruit and knead to incorporate all the ingredients evenly.

Once again cover and let rise for at least an hour or until doubled in size.

Tip dough out onto floured surface and knock down to remove all air. Split the dough into 12 equal pieces and roll into balls.

Arrange the dough on a parchment lined baking tray leaving enough gap for the dough to rise.

Heat your oven to 220°C.

Cover tray with a clean tea towel and let rise for 1 hour.

For the cross mix the water and flour together and place in a piping bag.

Pipe the crosses onto the buns in continuous lines.

Bake the buns for 20 minutes or until brown.

For the glaze heat up the golden syrup and brush over the warm buns before letting cool on a wire rack.

Serve with butter.
