Shrimp Burrito Bowl

This fantastically easy shrimp burrito bowl is so easy to make and pairs so well with my cilantro lime rice and homemade salsa and guacamole.

Ingredients

For the fried shrimp

1/2 pound / 450g shelled cleaned shrimp

1 bell pepper sliced

1 medium onion halved and sliced

2 cloves of garlic crushed

5ml ground cumin

5ml ground cumin

2.5ml chilli powder (optional for the heat)

15ml olive oil

salt and pepper to taste

For the cilantro lime rice

1 cup basmati rice

1 cup cold water

15ml unsalted butter

5ml salt

zest of two limes

juice of 1 of the limes

1 handful cilantro with stems chopped

Instructions

For the fried shrimp

Heat the olive oil in a pan and add the onion and pepper

Add a small amount of salt to help break down the onion and peppers

Fry on medium heat until the onion has softened and starts getting some colour on the edges.

Add the cumin, ground coriander and chili powder (optional) and cook for a few minutes

Add the garlic and fry for 30 seconds

Add the shrimp and fry for about 5 minutes or until the shrimp has just cooked through

Set aside

For the cilantro lime rice

In a heave based pot with a tight fitting lid add the rice, salt, butter and lime zest

Add the cold water and bring the pot to a boil

Once boiling set to low and cover with the lid

Let the rice steam for 25 minutes covered (don’t peek)

After 25 minutes take off the heat and lift the lid to release the steam

Cover for an additional 5 minutes

Uncover again and fluff up the rice with a fork

Add the lime juice and the chopped cilantro and stir through.

Set aside

For dishing up

Start with a spoonful of rice and top with the shrimp mixture

Add some salsa, guacamole, re fried beans and corn (the sides are entirely up to you)

Sour cream and cheese are also great

dig in and enjoy!
